AMERICAN STYLE, BABY!



This is possibly the most simple and tasty recipe for American blueberry pancakes- we had them for dinner tonight, but we could have easily had them for breakfast this Saturday. I just couldn't wait to be honest. It also happens to be the best recipe to make with your kids. The magic of mixing flower and adding some milk into it makes it irresistible for some skin to batter contact. The fingers get dipped in and the face shines with happiness. We bake lots together and this part of the process is always priceless to watch.
The secret ingredient is of course buttermilk. Sainsburys sell it. Otherwise any kind of kefir will do. I have to admit I've never tried it with soured milk but that should work too.

2 cups of white flower
1/2 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
2 Tsp sugar

2 large eggs
1/2 cup buttermilk (you can use more and the pancakes will be a bit more runny)
1 cup milk
20g melted butter
1 cup blueberries

Mix the dry ingredients and the wet ingredients separately. Then mix together to form the batter. It will be quite thick. Ladle the pancakes to desired size onto a hot frying pan. (Medium heat, to be honest- if too hot they will burn) Once bubbles start to appear in the middle flip them over and once golden throw them on a plate with some maple syrup and fruit or whatever topping you prefer. Yum.
